Birdy's Devon Honey Loaf

You will need

12 oz Self-rasing flour

1 level teaspoon salt

3 level teaspoons mixed spice

2 oz candied peel

4 oz soft-brown sugar

6 oz Birdys Devon Clear Honey

1/4 pt milk

1 oz lump sugar (for topping)

Method

Line and grease a 2-lb, loaf tin. Chop the peel finely. Sift together the flour, salt and spice, mix in the peel and brown sugar. Add the Birdys Devon Clear Honey and milk. Blend together until a smooth, stif dough is formed.

Place in the loaf tin. Lightly crush the lump sugar and sprinkle over the top of the loaf. Bake for about 1 1/4 Hours in a pre heated oven (350 f, Gas Mark 4)

Turn out and cool on a wite tray. A little more sugar can be sprinkled on top of the loaf if required. Serve cliced and spread with butter.
